  • At Home Chai

    Madly in love with your chai lattes from your favorite coffee or tea shop, but hate the price? Bring the flavors masala chai into your home with this simple chai concentrate recipe. Make ahead and use it whenever you’re ready to enjoy. Once you try it, you won’t go back!

    Chai pronounced, “ch-eye” is made from strong black tea, that’s been flavored with spices, boiled and typically has milk included. Chai masala is a very popular drink that originates from many regions of india and has now become a mainstay across many parts of the world. You can find chai on the menu at many coffee and tea shops, as well as concentrate on local grocery store shelves in the coffee and tea aisle. 

    I began making my own chai after searching for a concentrate on store shelves that maintained a strong black tea boldness, with lots of flavorful spices, no fillers, and low sugar. There are lots of chai concentrates on the market, but none of them hit all 4 of these boxes. I find the secret to a really good chai concentrate, is using a quality black tea and boiling the tea for a limited amount of time, to extract all the flavor. the best part about this method is that you can make as much concentrate as you like and store it in advance. You also have the freedom to control the sugar and spice content of your tea. If you don’t want to add brown sugar, use maple syrup or brown rice syrup instead.  

    After making your concentrate and preparing for your finished drink, use your favorite milk to create the latte. Do not add your milk to your full batch of concentrate, but until you are ready to use it. This allows the concentrate to last longer under refrigeration. I recommend full-fat milk, whole milk, coconut milk or cashew milk for this beverage as the fat content complements the boldness of the tea well. Are you a fan of black tea or chai?     At Home Chai

    • 1 oz (3 tbsp) strong black tea
    • 3 cinnamon sticks
    • 1/4 cup green cardamom pods
    • 3-4 black cardamom pods
    • 1 tbsp (10-12) clove buds
    • 1/2 tsp nutmeg
    • 1 tsp black peppercorn or ground black pepper
    • 1/2 piece ginger root (sliced)
    • 6 cups water
    • 1 tsp vanilla extract or vanilla bean paste ((optional))
    • 1/4 cup brown sugar or maple syrup
    • 1/2 cup honey
    • milk of choice (for steaming)

    Chai Concentrate

    1. In a large saucepan, add black tea, cinnamon, cardamom, clove, nutmeg peppercorn, and ginger. Cover with 6 cups of water. Bring the pot to medium heat and allow water to boil.

    2. After the water reaches boiling, allow to continue boiling for 10 minutes then reduce heat to lowest possible setting.

    3. Cover and allow to slowly steep for up to 45 minutes.

    4. After steeping, remove from heat and allow to cool for 5 minutes.

    5. Strain tea through a fine-mesh strainer lined with cheesecloth or a coffee filter in a bowl or pitcher.

    6. Add remaining ingredients and stir until incorporated.

    7. Transfer finished chai concentrate into a lidded bottle or container. Refrigerate until ready to use. Chai concentrate lasts up to 10 days under refrigeration.

    Prepare For Serving

    1. Combine Chai concentrate and milk of choice with about a 2:1 ratio in a steaming pitcher or in a medium saucepot.

    2. Using a milk frother: steam while adding some air until the desired temperature is achieved.

    3. On the stovetop: bring sauce-pot to low heat and whisk vigorously while heating to incorporate air. Heat until just warmed, do not boil. Remove from heat.

    To Serve

    1. Divide Chai into desired cups or mugs. Top with extra ground cinnamon, nutmeg (optional) and serve immediately.

    2. If enjoying iced, simply follow the 2:1 Chai to milk ratio and pour over ice instead of steaming/heating.

  • Veggie Sushi Rolls

    I find making sushi to be a cathartic, therapeutic activity that yields delicious results 100% of the time. Try by yourself or with the whole family for a yummy night of fun!

    The sushi boom 

    As sushi becomes more popular, so does its availability, demand, and price. Hibachi/sushi houses, poke shops and grocery store sushi counters have popped up across america and even caught a viral wave carouse the Instagram universe [lookup: hashtag sushi donuts] 

    Authentic japanese sushi is an art form that true masters spend decades tirelessly working to perfect using fresh, seasonal, and unique fish from across the clove. I will probably never be a master, but it doesn’t stop me from practicing.  Encourage to try yourself in your own kitchen and practice. See how good you get over time!

    For the sake of this recipe, I’m sharing how to make maki, sushi that includes ingredients (traditionally fish and vegetables rolled on a bamboo mat with rice and a specially dried seaweed called nori. The roll is then sliced into bite-sized pieces and served with pickled ginger, wasabi (a green horseradish paste) and soy sauce.

    Where to source your supplies 

    For these rolls, I used what ingredients were in my kitchen and came up with some tasty and unique combinations. You can add anything that holds well at room temperature and can be rolled, sliced. This makes the possibilities endless.   

    The upside of this sushi phenomenon is that many of the ingredients needed are available at your local grocery store in the international food section. If you can’t find sushi rice, nori, and pickled ginger, wasabi paste locally, they are available online on sites like amazon (I will include them below). It is an investment upfront for all these ingredients, but all of them come with ample supplies so you can usually make as many rolls as your hands will allow.

    I will update this post as I continue to come up with more flavors and combinations. Let’s have some fun! 

    Maki rolling tips and tricks 

    Wrap your bamboo mat in plastic film for easier cleanup after making your rolls. 

    Make sure your vegetables and other roll contents are sliced into thin logs or strips (julienne) to ensure your rice fits over the roll and slices evenly. Peeling your vegetables /fruit ahead of time makes them easier to slice in roll form

    Use a sharp knife dipped in water to keep the rice and nori from sticking to the blade.  

    Sushi rolls without [uncooked] fish can be made and sliced ahead of time for meal prep. However, do not make the rice in advance prior to making your rolls.  


    Veggie Sushi Rolls

    Sushi Rice

    • 1 1/2 cup sushi rice
    • water ((according to packaging directions ))

    Rice Seasoning

    • water
    • rice vinegar
    • sugar
    • salt

    Sweet and Sour Roll

    • 1/2 cup prepared sushi rice
    • 1 nori sheet
    • 1/4 avocado (thinly sliced)
    • 1/4 cup pickled greens ((or pickle of choice), julienne)
    • 1 carrot (julienne)
    • 1/4 apple (peeled and julienne)
    • 2 tbsp furiake seasoning

    Crunchy Veggie Roll

    • 1/2 cup prepared sushi rice
    • 1 nori sheet
    • 1/4 avocado (thinly sliced)
    • 1/4 cup pickled greens (or pickle of choice), julienne
    • 1/4 avocado (thinly sliced)
    • 1/4 cup crispy onions
    • eel sauce ((optional))

    Cream Cheese & Onion

    • 1/2 cup prepared sushi rice
    • 1 nori sheet
    • 2 green onions (julienne plus extra for garnish)
    • 1/2 small cucumber (peeled and julienneccc)
    • 1/4 cup lettuce (sliced into ribbons)
    • 2 oz cream cheese ((optional), sliced into 1/2 batons)
    • 1/2 tsp black sesame seeds
    • 2 tbsp mint chutney ((optional))

    Accompaniments

    • pickled ginger
    • wasabi paste
    • low sodium soy sauce

    Prep the rice

    1. For cooking by rinsing thoroughly in a pot or bowl until water runs clear. Prepare sushi rice according to manufactures directions on stove top or rice cooker.

    2. White rice is cooking, prepare sushi rice seasoning.

    3. In a small sauce pot, combine water, rice vinegar, sugar, salt. Place pot on low heat. And heat until salt and sugar resolve. remove from heat and allow to cool. Reserve half of finished sushi rice seasoning. When the rice has finished cooking, uncover and transfer to a bamboo sushi container or wide shallow bowl using a wooden spoon or spatula. Gently fan the rice to cool down to the point where it is no longer steaming.

    4. Add half the rice seasoning by pouring a few drops of seasoning over the rice and gently folding to incorporate using a wooden spatula or spoon. continue this alternating between pouring the seasoning and folding the rice until all liquid is absorbed by the rice. Set rice aside until ready to use.

    Assemble the rolls

    1. By placing bamboo mat, flat side up with the slats running horizontally. Optional: wrap mat with plastic film. Place 1 sheet of nori atop the mat. Using wooden spatula transfer 1/3 of cooked sushi rice to the side of the nori closest to yourself. Use reserved sushi rice liquid to coat your fingers and spread evenly across the nori. Leave about a 1-inch strip of nori uncovered by the rice on the side farthest from you. Rice should resemble a square shape atop the nori, that is about 1/2 inch high, and covers the left and right sides of the nori, with a 1-inch overhang at the end furthest from yourself.

    2. Place your desired combination of vegetables onto the end of the sushi rice closest to yourself. Lay the vegetables close together in a log pattern. To begin rolling, gently lift the end of the bamboo mat and use your fingertips to press the roll together from the outside of the mat. Continue to roll and press using moderate pressure until a log begins to form. After you have a full log, continue to roll until the bamboo mat covers the roll completely. Use your hands to press the roll together tightly before unrolling the bamboo mat.

    3. To make reverse nori sushi rolls, place the rice on the bamboo mat first, and form the rice to cover the entire mat. Cut a small 1-inch strip from the top of the nori rectangle to form a square. place the square atop the nori and proceed as normal.

    4. After you have created your rolls, use a very sharp knife dipped in water (or sushi rice seasoning) to slice the roll. After slicing and placing onto a serving tray, accompany with a 1 tsp of pickled ginger, 1/4 tsp wasabi with each roll and 1 dish of soy sauce per person eating for dipping. Enjoy immediately

    For meal prep

    1. Store sliced rolls in an airtight container under refrigeration for up to 2 days. To eat, remove from refrigerator to allow sushi to come to room temperature, about 20 minutes. Enjoy with desired accompaniments.

    Special Directions for Each Roll

    Sweet and Sour Roll

    1. Do a reverse nori roll by laying rice onto the bamboo mat, then cut nori sheet. Lay avocado, greens, carrots, and apple onto the nori. Roll into maki roll and sprinkle furikake seasoning atop. Slice and serve with accompaniments.

    Crunchy Veggie Roll

    1. Do a traditional maki roll by laying nori, then rice onto the bamboo mat. Lay cucumber, lettuce, avocado, cucumber, onto the nori. Roll into maki roll. slice and place onto a serving tray. Sprinkle crispy onions atop and drizzle with unagi sauce to serve.

    Cream Cheese & Onion

    1. Do a reverse nori roll by laying rice onto the bamboo mat, then cut nori sheet. Lay green onion, lettuce, cream cheese logs, and cucumber onto the nori. Roll to create maki and slice. place on serving tray and drizzle on mint chutney, sprinkle with black sesame seeds and thinly sliced green onion. Serve with accompaniments.

They are rich in vitamins A and C, as well as antioxidants that help combat free radicals in the body. When selecting peaches, it’s important to choose ones that are ripe, but not overripe. Look for peaches that are slightly soft to the touch and have a sweet, fragrant aroma. Brown Sugar – Brown sugar is the not-so-secret ingredient that gives this topping its sweet and delicate flavor; it adds a hint of caramel richness and depth to the overall taste.     This cobbler filling recipe is wonderfully simple, yet incredibly versatile. You can easily switch out the peaches for other fruits like apples, pears, plums, or even rhubarb. This simple filling can be used to top a variety of items, such as ice cream, hand pies, and even hot cereal, pancakes, or french toast. The peach filling also goes great with crumble topping for a quick and easy dessert. If you’re feeling adventurous, you could even add some extra spices or flavors to your filling to give it an extra kick. And if you’re looking for a more indulgent treat, you could always add a dollop of whipped cream or a scoop of your favorite ice cream.

    Peach Cobbler Dessert and Breakfast Topping

    • 1 lb Sliced Peaches
    • 1/3 cup Brown Sugar
    • 2 tbsp Butter
    • 1/2 tsp Vanilla Extract
    • 1/4 tsp Ground Cinnamon
    • 1/4 tsp Kosher Salt
    1. Bring a large saucepan or pot to medium-low heat and add the butter, brown sugar, cinnamon, salt.

    2. Allow mixture to dissolve and come to a bubble, about 2-3 minutes. Stir to incorporate as it is heating.

    3. Add peaches and any syrup in the can to the sugar mixture and gently mix to incorporate. Allow peach mixture to come to a simmer for 15 minutes

    4. Remove peaches from heat stir in vanilla extract and allow to cool.

    5. Use to top your favorite dessert, parfait, or breakfast.

    Caramel: A coffee favorite, Caramel brings a creamy and buttery sweetness to your latte, creating a rich and indulgent flavor. I like to make my own caramel sauce (hence the weird, semi-crystalized jar in the video below), or I buy Torani Caramel Sauce because it’s made with real butter and no additives.

    Orange Zest: Fresh orange zest provides a burst of citrusy freshness, balancing the sweetness of the caramel with a zesty kick.

    Nutmeg: Nutmeg adds a warm, earthy, and slightly sweet spice that complements the other flavors, contributing depth and complexity to your latte.

    These star ingredients combine in the Caramel Neroli Latte to offer a sensory experience that’s as comforting as it is intriguing. Each element contributes to a harmonious blend of flavors, making this latte delightful and aromatic.

    Chef’s Notes: TIPS FOR GREAT COFFEE

    The key to making at-home coffee that is close to coffee-shop espresso quality is down to:

    Quality Coffee Beans: try to find coffee beans that are fresh and haven’t been sitting on the shelf for a long time. Grinding them right before you You can often get really good coffee from a local coffee shop or roaster. If you don’t have access to a grinder, your coffee shop can grind them for you. If you do have them ground ahead of time, be sure to store your coffee in an airtight container and use them quickly. You will notice a significant difference in the quality of the cup just by following these steps.

    Brew your coffee stronger than usual. You can have good “espresso-like” coffee by adding more coffee grinds to your brew or reducing the water you use. In this recipe video, I use a French press. I usually weigh 12-16g of coffee (or two tablespoons) for 6 oz of water. Double this for more than one serving.

    Using good equipment: for a coffee that is closer to espresso. The best way to do this is with an espresso machine, but sometimes, it’s just not feasible or economical. If you don’t have an espresso machine, don’t worry! Manual coffee brewers like a French press or Moka pot are great for brewing strong coffee that can be used in drinks like these. Here are some of my favorite brewers an affordable price points (links).

    This recipe can be made hot or iced. To do so, cool your coffee down before adding to the cup. Top with ice and proceed with the recipe as directed!

    Caramel Neroli Latte full recipe

    Caramel Neroli Latte

    A floral twist on your daily caramel coffee ritual, with orange blossom a hint of spice. Caramel Neroli Latte

    • French Press or Moka Pot
    • Hot Water Kettle
    • 24-32 g or 4 tbsp freshly ground coffee
    • 12 oz near-boiling water (About 195º)
    • 4 oz frothed milk of choice
    • 2-4 tsp caramel sauce
    • 1 tsp neroli (orange blossom water, divided)
    • ground nutmeg for topping
    • orange zest for topping
    1. Add coffee and water to the French press. Brew for 5-7 minutes or to your preference, then plunge. Set aside
    2. To two mugs, drizzle caramel sauce and 1/2 tsp orange blossom water to each mug.
    3. Pour coffee evenly amongst each cup.
    4. Top the coffee with steamed or frothed milk.
    5. Add a sprinkle of nutmeg and orange zest atop each cup.
    6. Drizzle with extra caramel if desired. Serve and enjoy!

    Peaches – the absolute star of this recipe. Peaches are sweet Peaches are a versatile fruit that can be used in both sweet and savory dishes. They are rich in vitamins A and C, as well as antioxidants that help combat free radicals in the body. When selecting peaches, it’s important to choose ones that are ripe, but not overripe. Look for peaches that are slightly soft to the touch and have a sweet, fragrant aroma. Brown Sugar – Brown sugar is the not-so-secret ingredient that gives this topping its sweet and delicate flavor; it adds a hint of caramel richness and depth to the overall taste.     Easy Sandwhich Bread Recipe

    Delicious and simple bread recipe thats perfect for sandwiches and rolls

    • 3/4 cups warm water
    • 3/4 cups warm milk (can substitute for plant based)
    • 1/4 cup honey or sugar
    • 1/3 cup avocado or vegetable oil (plus more for dough)
    • 1 packet (or 2.5 tsp active dry yeast)
    • 2 tbsp malted milk powder (optional)
    • 4 Cups (1/2 Cup All Purpose Flour*)
    • 2 tsp Salt
    • 1/4 cup Egg-wash or Milk (Optional)
    1. In the bowl of a mixer combine, water, milk, oil yeast, malted milk powder (if using) and sugar. Allow yeast to bloom (it should have a bubbly appearance) about 5-8 minutes.
    2. Add 2 of the 4 and a half cups of flour to the mixer and turn to low speed using the dough hook attachment. Mic until the flour is incorporated, about 3 minutes. Afterwards, add the 2 remaining cups, scraping down the sides to make sure all of the flour is in the bottom of the bowl. If the dough looks wet, add the additional half cup of flower.
    3. Increase the mixer to medium low speed and mix until the dough goes from shaggy and rough, to smooth. It may also begin to form a ball and slap the sides of the bowl.
    4. After mixing, remove the bread from the mixer, form into a ball and transfer to another large greased bowl. Coat the dough ball with oil and cover with a damp towel or plastic wrap. Allow dough to proof in a warm (80º-90º) area until doubled in size, about 1 hour.
    5. Transfer dough to a work surface and push out the gas from the first rise. The dough will begin to deflate and its ready to shape. Line your tray or loaf pan(s) with parchment. Divide into equal sized balls (see notes) to place inside your vessel of choice. Transfer dough pieces to the pan. or tray. Cover with a damp towel or plastic again and allow to proof until dough has almost doubled once more (another 30-45 minutes). Meanwhile, Preheat oven to 350º.
    6. After loaf or rolls have gone through the second proof, remove the cover and gently brush the top with egg wash or milk. Transfer to coven and bake until bread takes on a golden color, about 30-35 minutes for loaves and 20 minutes for rolls.
    7. Remove from oven and cool for about 5 minutes before removing the bread from the pan. Transfer to cooling rack to cool completely before slicing. Enjoy immediately with butter, jam or on its own.

  • Easy Crumble Topping Recipe For Fruit Crisps, Sundaes, and Oatmeal Topping

    A classic crumble recipe made with oats, butter and vanilla that’s perfect for your favorite desserts, breakfasts and sweet treats.

    Rolled Oats – I love to add rolled oats crumble because it adds variety in texture, plus the added benefit of whole grain! Try with rolled barley or any mixed rolled cereal as well.Butter – Everything is better with butter! Adds richness to your crumble and helps with creating a golden crisp crumble.Brown Sugar – I like to use brown sugar over white, because the added molasses adds a rich, caramelized crisp to the recipe.Cold Water- it may seem like a insignificant portion of this recipe, but cold water is what gives your crumble its distinct texture. Make sure your water is as cold as possible when adding to your flour/sugar/oat mix

    This is a very versatile, classic crumble topping that can really be customized to any flavors you desire. I love to use it on blueberry lemon cobbler, apple crisp, oatmeal and peach cobbler, as few examples. It’s also great on ice cream sundaes! You can also switch up the spices and flavors within the crumble itself, like cardamom, anise. You can also swap vanilla extract for flavors like, orange, lemon or coconut extracts. When preparing your crumble, be sure to use your fingers to press the butter, flour and cold water together. This creates “nooks and nuggets” within the pastry that produces a great texture in your crumble after it bakes. If you want to keep your hands less messy, invest in a pastry cutter, which does most this work for you.

    This recipe makes a significant amount of crumble that you can use in a variety of recipes. You can bake it in on a cookie sheet or sheet pan and store the cooled crumble in an airtight container for up to two weeks. It can also be mixed and store in the refrigerator unbaked for up to 5 days. To use, simply add your favorite fruit or fillings to a baking dish and sprinkle the raw crumble on top, then bake everything together for an easy dessert.

    • 3 cups flour
    • 1 1/2 cups brown sugar
    • 1 cup rolled oats
    • 1 stick butter
    • 1/2 tbsp salt
    • 2 tsp vanilla extract
    • 1 tsp ground cinnamon
    • 1 tsp ground nutmeg
    • 1/4-1/3 cup cold water
    1. Preheat the oven to 360.

    2. Combine flour, oats, sugar, salt, and spices in a medium mixing bowl and stir until combined.

    3. Grate or cut butter and fold into dry ingredients until mixture resembles a loose, sandy consistency.

    4. Fold in ¼ cup of water until clumps about the size of a pea form. Add more water if the mixture seems too dry, but do not overmix.

    5. Spread the mixture evenly onto a parchment-lined baking sheet and bake until golden brown, about 20-30 minutes, stirring halfway through to prevent burning.

    6. After baking, allow to cool and transfer to an airtight container until ready to use. Crumble will last up to 2 weeks.

  • Maple Brown Sugar French Toast Bake

    All the delicious warm flavors of French toast in an easy-to-make oven ready dish. French toast bake is perfect for weekends, brunch and entertaining friends.

    A few years ago this became one my moms signature dishes for when she has all of her kids, grandkids over for the weekend. She always preps her bake with fluffy brioche tons of butter, brown sugar and pecans for crunch. The next morning, it goes in the oven and fills the air with sweetness, which makes us anticipate tearing it apart even more! Of course, my recipe isn’t as good as hers, but I managed to make it my own.

    Brioche – this fluffy and rich bread is made with butter, and really makes a difference in the final bake. If you don’t have brioche, any sliced artisan bread or plain white bread can be used.
     
    Maple Syrup – This is my own signature addition to the bake. Use pure maple syrup, and not pancake syrup, as it makes a difference. If you don’t have any on hand, substitute for extra brown sugar.
     
    Brown Sugar – Adds richness and sweetness to your bake, and makes a great compliment to maple syrup 
    Nutmeg and Clove – adds warmth, nuttiness and a distinct flavor to your bake. You can also substitute for spices like cardamom, allspice, mace or classic cinnamon

    The beauty of French toast, is that you can use any fruits and nuts you would like to fit your tastes. Add raisins, cherries, nuts, nutella, berries or even cream cheese to the layers of your bake. There are tons of flavor combinations to make this your signature French toast recipe.

    1. Bring a large saute pan or griddle to medium-high heat

    2. Add oil, then the onions and peppers, saute to prevent burning

    3. When veggies begin to soften add garlic, oregano and seasoning.

    4. Continue to saute until slightly golden

    5. Remove from heat, cool, and store for service

  • How to Make a Dutch Baby Pancake

    Weekends are for brunch! It’s EASY. Toss everything in your blender, pour it in your buttered skillet. Use whatever toppings you have in the fridge for an amazing weekend brunch.

    When I was a kid, my mom and grandmother would often take me to The Original Pancake house here in Chicago. I loved (and still do) my good old-fashioned buttermilk pancakes, but every once in a while, my grandmother would order a Dutch baby pancake. It was an elusive treat at the time because it took what felt like forever in childhood years for it to come to the table. Despite this, I was always in awe of the big cast iron skillet, filled with this puffy dough, piled high with apples and cinnamon. When I got older, I decided to randomly research Dutch Baby recipes on my own. If I had known how easy they were to make, I probably would’ve made them way earlier in life! This recipe is adapted from The Kitchn. You can find their recipe here, with a few seasoning modifications of my own.

    Chef’s Notes

    The beauty of a dutch baby, is that after it rises in the oven, the whole dish “collapses” after baking and leaves a bowl-like well in the center of your pancake. This makes it the perfect vehicle for toppings; like fresh berries, fried cinnamon apples, peach cobbler filling or even cheese, charcuterie and herbs. My favorite combinations include: 

    • Blueberries and Peaches
    • Apple Pie filling
    • Peach cobbler topping (you can get my recipe, here)
    • Prosciutto and burrata with basil
    • Cheddar and chicken sausage

    The versatility are endless. The recipe below feeds about 2-3 people, but you can double it for a larger group.     Dutch Baby Pancake

    Dutch Baby Pancake

    • 1/2 cup Flour
    • 1/2 cup Milk
    • 2 Eggs
    • 2 tbsp Sugar
    • pinch Salt
    • 1/2 tsp Ground Nutmeg
    • 2-3 tbsp Butter
    1. Preheat oven to 425° 

    2. Place butter in cast iron skillet and set aside

    3. in a blender or food processor, add flour milk eggs sugar salt and nutmeg 

    4. Blend until smooth, and set aside to rest 

    5. While resting, place cast iron skillet in the oven to melt the butter 

    6. After butter has melted, gently pour the batter into the pan. Return the pan to the oven and bake until pancake is risen and golden, about 15-20 minutes 

    7. Remove from oven and top with fresh berries, fruit, dust with powdered sugar and drizzle with lemon juice
